Under the direction of the Pastry Chef and/or Unit Supervisor, assist in all Bake Shop production as required, to include, but not limited to, scale and shape dough; proof and bake products; prepare cakes, pies, pastries, cookies, and other products, following standard recipes and procedures using equipment normally found in a bakery (i.e., mixers, dough shapers, fryers, ovens, proof boxes, etc.), to fill orders as required.


Typical Essential Functions

Prepare all products required or requested by the bakery to the highest possible level of quality and consistency, following approved procedures and recipes.

Fill catering and IDT orders and deliver to various Campus Dining cash operations in a timely and accurate manner.

Train, direct, and supervise student personnel as assigned to ensure a smooth, safe, and efficient operation.

Maintain a clean, sanitary personal work area and Bake Shop operation using prescribed procedures to comply with local, state, and federal sanitation regulations to maximize a neat, clean, and sanitary environment.

Maintain a safe operation. Watch for and correct potential safety hazards, such as spills on floors or improper lifting techniques. Follow prescribed safety procedures to ensure compliance with established Cal Poly Corporation regulations and safety standards to maximize a safe environment for all fellow employees and customers.

Establish and maintain effective working relationships with others, both in the Bake Shop and in other areas to ensure good communication and enhance “team” effort.

Actively assist in the control of product and labor waste.

Perform other duties as requested by the Bakery Unit Supervisor or Pastry Chef.

Adhere to a standardized recipe system in cooperation with the Unit Supervisor, Pastry Chef, and Executive Chef to ensure consistently high quality products.

Assume the basic responsibilities of the Unit Supervisor and Pastry Chef in their absence.

Report any equipment malfunctions through prescribed procedures to minimize loss of production efficiency due to equipment failure to the Pastry Chef or Unit Supervisor, or in case of their absence, to Maintenance.


Requirements

Requires three years food service experience including two years experience as a journey level baker, preferably in a large scale, variety Bake Shop. Ability to operate ovens, mixers, dough shapers, fryers, proof boxes, dispensing and packaging equipment, scales, measuring devices and slicing equipment. Have a good working knowledge of principles, techniques, and procedures of bakery operations. Ability to bake from scratch using standardized recipes, manage time and meet multiple deadlines, supervise students and develop good working relationships. Lift and carry 50 pounds. Ability to withstand extreme temperatures and standing for long periods of time. Become ServSafe certified within first year of service and maintain certification as required. Possess a valid California Driver’s License and a driving record acceptable to our insurance underwriters. Must pass background check. Regular full-time attendance required.
